Black Bean & Banana Stew

Ingredients

  • 2 1/2 Cups Water
  • 2 Bananas (medium, sliced)
  • 1/2 White Onion (diced)
  • 3 Garlic cloves (minced or chopped)
  • 1 Green Chili Pepper
  • 4 Cups Chopped Tomatoes (canned or fresh)
  • 2 Spring Onions (chopped)
  • 1 Tin Black Beans
  • 2 Cups Kale
  • Salt & Pepper

Instructions

  1. Heat 1/3 of the water in a large nonstick pan over medium heat. Add the green banana, cooking two to three minutes per side or until slightly browned, adding more water as needed.
  2. Add the onions, chilli and garlic. Cook until translucent, about five minutes, adding more water as needed.
  3. Stir in the tomatoes and simmer for five minutes. Add the spring onion, black beans and any remaining water. Bring to a boil then reduce to a simmer for 10 to 15 minutes.
  4. Stir in the kale and cook until just tender. Add seasoning to taste. Divide into bowls and enjoy!

Notes

Leftovers - Refrigerate in an airtight container for up to four days
Serving size - One serving equals approximately two cups.
Additional Toppings - Top with yogurt, cheese, or fresh parsley.
