Heat the oil in a pan. Add the spinach and cook until wilted. the add the diced tomato. Continue to cook until the diced tomato has softened. Season the vegetables with another pinch of salt and pepper
Push the vegetable mixture to one side and pour the eggs into the empty side. Stir the eggs frequently as they cook and then incorporate the vegetables into the eggs once the eggs are cooked through.
Transfer the eggs to a plate. Serve with sliced orange slices and enjoy!
